Don’t Be Too Cool For School

At last! I am done with summer school, which was one of the best and worst decisions I have ever made: the pain was intense but short; nevertheless, I had to work my bootaaay off. Regardless of being slammed with work, I was able to set aside around an hour each day to working out and rehab, although I am looking forward to dedicating these next couple of weeks to going all out. But… can you all believe it is AUGUST!? Where did the summer go… Last time I checked it was still May.
A little update on the craziness that is my life… I am now reading Eating Animals by Jonathan Safran Foer, which is all about “meat”, where it comes from, why we eat it, its journey from the farm to our plate + more. I am not very far into it but I will definitely give a more in-depth review once I have finished it. Next, I am going to read The Grain Brain by Dr. David Perlmutter and it exposes the truth about the effects of wheat, sugar and carbs on the brain… don’t worry though, I will not be going gluten free! Ever!

I have also received my new Garmin Vivoactive watch which I am excited to incorporate into my workouts. It has a number of functions that I don’t quite know how to use to their full extent but it has great reviews so once I have used it for a couple of weeks I will be sharing my overall experience with you all!

Staying On Track With A Busy Schedule

Ahh! I apologize for being slightly MIA these past few weeks. Unfortunately, it is going to continue for just another couple of weeks as I finish up my summer class (which proved to be more demanding and fast pace than originally planned) but I promise I will be back! Regardless of the heavy course load, I have made a great effort to get my workouts in early, eat well and stay hydrated.

We came. We saw (a lot). We conquered.

This past week, I traveled to the Wild West for the first time. Upon our arrival in Salt Lake City, mountains surrounded us, some snow-capped, others covered with green ground cover. Coming from an initial elevation of just about 800 feet to nearly 8,000 feet, there was a chance that we may feel some of the symptoms of elevation sickness but luckily we adjusted quickly.
We drove, we hiked and we rode horses.

We saw it all… from bison, to elk, to moose (whose plural is still… moose) and the national parks did not disappoint, aside from not seeing a bear on our entire trip.

I have the biggest sweet tooth sometimes, especially for anything chocolate. But I have found a yummy alternative to everyone’s favorite, ice cream! Frozen bananas provide an extremely easy, cheap and healthy alternative to any of your favorite flavors of ice cream.
