Don’t have a spiralizer? Don’t know where to start? There are many options available to fit any price range. Perhaps, start with the simplest of spiralizers, until you find that your addiction is real!
The options range from a Julienne peeler, to a hand held spiralizer, all the way to a tabletop veggie pasta maker.
I use the Veggetti, available for just $14.99 & it gets the job done with ease! (+ it’s sure to make you laugh every time you say Veggetti out loud.)
I’ve always found cooking tofu to be an impossible task, therefore, I’ve somewhat avoided making my own tofu at all costs.

BUT, after much trial & error, I think I’ve found the ultimate solution.
I simply can’t get enough of this stuff… With veggies, served over rice, both?!
Marinating is key. The tofu soaks up so much flavor + packs a small punch. So… For best results, allow up to 30 minutes to marinate your tofu.

Oh my, where did the year go?! It’s always crazy to me how the year starts out, seeming daunting, yet full of possibility. Then, before we know it, it’s winding down & those new year’s resolutions that we once made are loooong gone (what resolutions did I even make…?)

In between this busy thing called like, I’ve been cooking, schooling, practicing a little bit of tennis, all while trying to hold onto these precious last moments of my senior year of college (OK WHAT!?). It feels like there are so many lasts… last first day of school (ever? Nope… hopefully not yet). Last time registering for classes. Last fall tennis season. Last college football game (as a student). It feels like everything is a last. (except I will appreciate that last exam… but there’s no rushing that).
But hey… the whole world is waiting for me to make even more firsts!
With a busy schedule (as I am sure most of us can relate), the only way for me to truly stay on track with clean eating is meal prep. I am not a huge fan of the traditional chicken + broccoli for lunch & dinner (5x a week) especially because I’m vegetarian, but more because its BORING!
