Homemade Almond Butter Granola Recipe

Granola is such a yummy little snack + it’s surprisingly really easy to make.

I always love a good, versatile recipe… + this one is exactly that. You can pack it with any seeds/nuts/extras that you want, plus you can control how sweet you make it. 

I topped mine with almonds, chocolate chips, chia seeds, cinnamon, honey, + Vanilla & Espresso Barney butter. But: the options are endless + the choice is yours!


How to:

Preheat oven to 315. Mix 1 1/2 cups of oats, almond butter, approx. 3 table spoons of coconut oil, honey (or agave, maple syrup) in a large mixing bowl. Ensure that all of the oats are coated by the wet ingredients. Add your nuts, seeds, or extras. (Don’t add chocolate in just yet!)

Optional: Sprinkle a little bit of brown sugar on top to caramelize.

Spread the mixture into a thin layer on parchment paper + bake for approximately 30 minutes, or until brown… Flipping after 15 minutes. If you prefer chunky granola, do not stir the granola.

Take the granola mixture out of the oven, let it cool. Add in any extra ingredients (ahem, chocolate chips).

Store it in a jar for up to a month, or longer in the refrigerator. (LOL if it even lasts that long!)
