Tuscan Soup

There’s nothing like sitting down with a big bowl of comfort food.¬†Cue: Tuscan Soup.

Tortellini. Kale. White Beans. Potato.

This winter, soups have been my go-to because I just throw all the ingredients into a big pot, let it simmer, then I have meals for the entire week!

I topped the soup with a little parmesan + bruschetta crisps & it was fantastic.

DEETS: Mix 1 carton of veggie stock + equal parts water, chopped onion, potato, carrots, fresh garlic, 1 can of white beans, 1 can of red kidney beans, + let it simmer on low for 30 minutes. Add chopped kale + tortellini & let it boil for 5 minutes. Remove from the heat + enjoy!
