With a busy schedule (as I am sure most of us can relate), the only way for me to truly stay on track with clean eating is meal prep. I am not a huge fan of the traditional chicken + broccoli for lunch & dinner (5x a week) especially because I’m vegetarian, but more because its BORING!
This healthy combo has been one of my go-to recipes recently!
Vegetable Korma Recipe:
Lightly sear onions, sweet potato, white potato, carrots + zucchini (add any veggies that you wish) with a small amount of coconut oil.
Add 1/2 cup of water & 1 can of coconut milk.
Mix in curry powder, chili powder, garlic powder + lower the heat to a simmer.
Let the mixture cook for approximately 20-30 minutes, or until thick. Served over rice//cauliflower rice.
