Chia seed pudding is a mini powerhouse of calcium, antioxidants and omega-3’s. + I’m a big fan of anything that I can pop into the fridge & have breakfast waiting for me in the morning! (ahem, 0vernight 0ats)
I’ve avoided making + eating Chia Pudding for as long as I can remember. I was always so unsure of what the texture would be like + what it would taste like, but after some research, I decided to take the plunge & I’m so glad that I did.
We’ve been hearing for what seems like years, how great Chia seeds are. Just last year, I shared their many benefits. Sprinkle them on top of salads, sandwiches, blend them into smoothies or use them as an egg replacement… the possibilities seem endless.
I present to you: Chocolate Chia Pudding (+ it’s so yum!)
1 1/2 c. milk
1/3 c. chia seeds
1/4 c. cocoa powder
1 tbsp honey or agave (can sub for pitted dates or maple syrup)
- Whisk the ingredients vigorously or place them in a blender. Sweeten to taste.
- Let it cool in a closed container overnight.
- Served chilled with desired toppings.
Once you have the chia seed-to-liquid ratio down, the flavor possibilities are completely up to you!
Blended (creamy) or unblended (rice pudding consistency)… Your choice!
